Happy Thanksgiving!

Wishing a joyous and bountiful Thanksgiving celebration to all of my SmokeRing barbecue friends! I decided to smoke-roast the beef rib roast, instead of the ham. Giselle will be making an apple-butternut squash casserole, an asparagus casserole, mashed taters with root vegetables (carrots, turnips & parsnips), and I plan to make some chicken & dressing for my cousin and me. For dessert, Giselle's homemade banana pudding and a pumpkin-praline pie. My cousin will be contributing a couple bottles of wine to the feast. Gonna be a good day, Tater! :)

ASPARAGUS CASSEROLE

Prep time: 30 min.
Cook time: 20 min.

Drain 4 cans asparagus spears, reserving liquid. (Giselle likes to use the cut asparagus spears, BTW.)

Place asparagus in a greased, oven-proof casserole dish

Melt 12 Tbsp butter until bubbling, stir in 12 Tbsp flour gradually. Remove from heat, gradually stir in liquid. Return to stove, stir until thickened.

Stir in 2 c cream, salt & pepper to taste. Pour mixture over asparagus.

Sprinkle 4 c grated cheddar and top with crushed potato chips

Bake @ 400º for 15 min.

Unlike most folks, I don't dread all the left over turkey dishes.  In fact I plan for them and even cooked an extra turkey just to add to the left overs.  I took the extra turkey and sliced all the breast and white meat for sandwiches later.  Put all the bones and scraps in a big stock pot slowly simmered them all day to make a very rich turkey stock and then last night put together an excellent pot of turkey and sausage gumbo with hab peppers.  Had several folks over to eat with sweat popping off the forehead but they all went back for seconds and thirds so I don't think that I used to many habs.
 
I also made a sammy that I felt like rated right up there with sex.  It really was that good.  Toasted bread, sliced breast meat, helmans mayo, four crisp bacon strips, sliced tomatos and a few slices of fresh avacodo.  It was so good in fact that I believe that I'll have another one for breakfast.

Barley is not a real popular staple in deep East Texas but my daddy's GF [from Ohio] made a big pot of turkey and barley soup at Christmas about ten year or so back.  I thought it was different and I liked it so much that I even went out and bought a sack of barley.  I still have it un-opened in da pantry................hummmm, I wonder......???

I really like blue cheese --been to the Maytag farm a few times to get the
best but sometimes on sandwiches it just seems to overpower everything else.
Its often served on a really nice ribeye and the flavour of the beef
disappears.

Well, not too much blue cheese, of course. Just enough to give it a
pungent boost. A few flecks to brighten the palate.

But what's with your "flavour" spelling? I thought you were a true
'merican. Are you going to the dark side of English language usage,
like Mr. Curry?

I agree that blue cheese on a great steak is too many good things.
Great flavors are wonderful, but piling one on top of another and
another often diminishes the experience. Give me a great steak, and a
bit of blue cheese on the side, with crusty bread, and I'm good to go!
