Learn to make mozzarella at home from local milk!*  Our fifth "30-minute" mozzarella class will take place in Kapa'au on Sunday, Jan. 9, from 2-4 pm.  During this class you will learn about "ripening" the milk with citric acid (provided), creating curds with rennet (also provided), cooking the curds in a microwave, and how to stretch the curds into beautiful mozzarella.
 
Enrollment is limited to 8 people.  The first eight who go to www.slowfoodhawaii.org and use the "Donate" button on the home page will be enrolled.  Slow Food Hawaii members should donate $15.  If you are not a member, donate $25 (please don't use the button for mozzarella workshops as that was for an earlier class).  After you are enrolled, you will receive directions to Deborah Winter's house, where the class will be held, and will receive complete instructions.
 
*You will need to bring one gallon of Mountain Apple brand whole milk (only available at KTA stores) and some common kitchen utensils with you for the workshop.  No organic milk sold commercially in Hawaii will work as they are all ultrapasteurized and brought in from the mainland.
