following month only has 20k Faves, do you still have to pay for
unlimited faves with 500USD or do you automatically rollback to "free
mode".
2. Is there any way to disable an app with local faves after it has
been released and thereby stop eventual billing for the app?
3. What type of payment methods are available and how are they
performed? I can't find anything about this on the site.

Yes, if the following month is under the threshold, you will not be charged for it.
