In the past, I’ve always just chosen the highest file version allowed, and then applied the version I want to use to that number. Understand, there could be differences in the template for what you are applying verses the version of firmware you have applied. It’s not been an issue for me in the past, but just be aware that it could be an issue, and be prepared to go back to a version that works for you.
I suspect the newer Polycom versions are in the latest releases – like 19.04, but I’ve yet to try those as of today.

I have many Vvx500 with no issues. Personally I run version 5.5.2.
If you look, you will see a lot of these new Polycom releases are for new phone models, and Lync related features.
The VVX500 has been a stable platform for years.
