How change Packet for sending to proxy?

Hi,
I know this question is about SIP connection and is not about Siphon,
but I did not know another place hope to answer me! ;)
In some of country the SIP connection is filtered, So I set up proxy
server and want to replace all "SIP" string with another string and
send to proxy server then proxy replace "SIP" in packet and send to
server.
But I don't know how can I replace "SIP" string in packet! I use UDP
packet to send data.
