an idea of how many times it may have been accessed. Should I be
tracking this from the server it is hosted on or does Sindice also
provide stats?

most definitely Sindice cannot track the access to your specific
dataset that are done by clients directly.
We do not at this time provide tracking for requests which involved
your dataset e.g. as a result that shows up to users but this is
indeed a good idea we can consider. We are about to release a " per
dataset" comprehensive statistics, we could do log analysis and put it
in there
