SimpleSAMLphp 2.1.0 Release Candidate 1

Hi,

We have released version 2.1.0-rc1 of SimpleSAMLphp. This is a release candidate for version 2.1 of SimpleSAMLphp.

The main focus of the 2.1 release is to provide drop support for Symfony 5.4 and PHP  7.4. Also new in 2.1 is that we release two versions now; a 'slim' and a 'full' version.
