to Simple Diet Diary for Android
When I create a food item, the nutrients that appear by default and their order seem pseudorandom. I would like to order them so that, on new entries, they match the order that they appear on US nutrition labels without having to delete and re-add manually for each new food item. Thanks for a great application!

The nutrients that appear on a new blank entry are the ones that you permanently display in the totals bar, plus any others used in your previous entry.
The order is defined in Settings -> Nutrient Settings. Drag nutrients up and down the list with the handles on the left to change the order.

Thanks! That's slightly suboptimal because I'd like to keep a couple of nutrients permanently displayed that would appear out of nutrition label order on a new entry, but I can sacrifice the permanent display to get the order on the entry screen right. If I use all of the nutrients for an entry to get the "previous entry" value right, but I don't input a value for some of the nutrients, will it preserve the nutrients' position in the list for subsequent entries?

The order should be the same regardless of whether some nutrients are permanently displayed.
