CFS1 = FS98 with guns (for the most part, certainly graphics and look/feel
wise)... essentially the CFS series are identical to FS, you can use FS
aircraft/scenery in CFS (but not the other way around), and functions such
as reassigning keyboard functions are pretty much identical to the civilian
versions.
I haven't had any experience of CFS2 myself, but I would assume that it's
pretty much the equivalent of FS2000/2002, and judging by CFS1 and 3, you
should be able to do all the other stuff like reassigning keyboard functions
in more or less the same way.

CFS2 is similar to FS2002 as regards what system you need to run it, it's
got better graphics than CFS1 and the AI fighters work better, too good for
my licking.
I own CFS1 & 2 but have not bothered with 3 as it was developed differently
to the previous versions.
If you can run FS2002 O.K. then you will be able to run CFS2 O.K.
There's not any of eye candy away from the battle areas and airfields, just
ground textures. You can turn down the scenery detail when in combat, you
will not have any time to look at it, in fact I would take a crash course in
aerobatics first, the enemy is super quick and they always seem to have more
power and a better turning circle.
