The easiest way to make paleo spaghetti is to cut the spaghetti squash in half, scoop out seeds only, place face down in 2 inches of water (in a baking dish) and cook @ 350* for 40 minutes (for a large squash). When done, using a fork, scrape out "spaghetti". You can also microwave the squash but it gets much softer in the oven.
Here is a great homemade (almost) paleo spaghetti sauce :) It's not up on the blog yet!
1 can diced tomatoes (28 oz can) (make sure there aren't any extra ingredients in there...should be tomatoes only!)
1 can crushed tomatoes (28 oz can)
1 can (6 oz) tomato paste
3 teaspoons (more or less depending on taste preference) of oregano
2 teaspoons (more or less depending on taste preference) of basil
4 tablespoons of maple syrup (more or less depending on taste preference)
Salt and pepper to taste
Place all ingredients in a pot over medium-high heat. Once it's well combined, let simmer for 15 minutes. I usually never measure the spices..I just add until I get a good taste.
I have gone through a ton of tomato sauce recipes and this one is the best! Also, I like to make mine in bulk and then put the extras in mason jars. Costco sells tomatoes (crushed and diced) for SUPER CHEAP!!!

We are trying to do paleo lasagna tonight using zuchinnis (julienned)...hopefully it's good. The best part of lasagna is the cheese, so here's hoping!!! :)
