Cooler weather won't stand in the way for our vegetables. Above Courtney is pictured with her giant Salad Turnip, oh was it tasty! Each week we're adding new vegetables to the market list. We now have Cucumbers, Basil, Kale and Peas!

| Delicate, Delicious, Dill 
Throughout time Dill has had many purposes: a good luck charm, medicinial use and to ward off witches. Today we primarily use it in the kitchen and for medicinal uses. Dill is derived from the Norse word 'Dilla' - to soothe or lull. Aptly named as Dill is good for soothing many stomach issues. In North America Dill has found it's popularity with the pickle. While in Europe it is commonly used with Fish. When using Dill as a garnish it is best added fresh to preserve it's flavour. 
Once you start to think about it there is really no end as to what would benefit from a little dill. Potato or egg salad, roasted vegetables, chopped up finely on a morning egg or omelette, blended in dips, sprinkled on salads, incorporated into biscuits, herb rubs for meat or fish...Dill for everything! ---------------------------------- Considering Dill is primarily used as a flavour enhancer in smaller quantities, I chose two recipes this week that incorporate new vegetables we have added to our market table. This way you can enjoy an entirely Wild Flight grown dish! |

RECIPES OF THE WEEK: SWEET-AND-SOUR CUCUMBERS: with Fresh Dill (epicurious.com) If the sugar raises concern try reducing the amount, substituting with honey or omitting all together. INGREDIENTS: - 2 English hothouse cucumbers (1 1/2 pounds total), very thinly sliced
- 1 tablespoon coarse kosher salt
- 1/2 cup distilled white vinegar
- 1/4 cup finely chopped fresh dill
- 3 tablespoons sugar
- 1/2 teaspoon freshly ground black pepper
DIRECTIONS:- Place cucumber slices in colander. Sprinkle with salt; toss to coat. Let stand 15 minutes, stirring occasionally.
- Meanwhile, for dressing, stir vinegar, dill, sugar, and pepper in large bowl until sugar is dissolved.
- Drain cucumbers well; pat dry. Add cucumbers to dressing and stir to blend. Refrigerate at least 15 minutes and up to 2 hours; serve cold.
---------------------------------- RAW BEET & DILL SALAD (floatingkitchen.net) I chose this recipe for its simplicity and adaptability. Enjoy as is or bulk up the salad with feta, pumpkin seeds and a head of lettuce or bag of spring mix. This recipe could also be used to add to wraps or sandwiches. 
INGREDIENTS: - 2-3 tablespoons dill, roughly chopped
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon champagne vinegar
- 1 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3 cups grated beets (from about 4 to 5 medium sized beets)
*You can substitute red wine vinegar or apple cider vinegar for the champagne vinegar. DIRECTIONS:- In a small bowl, whisk together the dill and the next six ingredients until well combined.
- Add this dressing to the grated beets, tossing until the beets are evenly coated.
- You can serve this salad immediately. Or chill it in your refrigerator for several hours before serving. Leftovers can be stored in your refrigerator in an airtight container for up to 2 days.
