ON THE FARM

All sun and no rain makes for thirsty plants!

Part way through last weeks heat wave it was time to ramp up our irrigation. In the field Courtney adjusted our irrigation piping to ensure all our new transplants get a healthy drink after the hot afternoon sun.

In the greenhouse Bennett is tucking small irrigation tubing along the tomatoes. We bury it under the landscape tarping put in place to deter weeds. Burying the tubes under the tarp results in better direct watering to the plants.

SALAD TURNIPS:

Altering Childhood Perceptions of Turnips.

As a child I was never too happy to see Dad's stew steaming in a bowl on the dinner table. So many strong flavours my little taste buds couldn't yet appreciate. I feel most of us can relate and for a few years would wrinkle our nose at the mention of Turnip or Parsnip as our memories would conjure up the strong aromas of Dad's stew. But now, there's a new kid on the block, showing up on the Market table and revolutionizing our views of the Turnip.....it's the oh-so-fresh Salad Turnip!

 

Originating from Japan, Salad Turnips are also commonly know as Hakurei Turnips. Smaller in size, available earlier in the season and with edible greens, Salad Turnips are your next great culinary adventure. Unlike the fall harvested turnip that tastes better after cooking, Salad Turnips are ready for eating right out of the ground. Most of us on the farm enjoy them on their own as a sweet, juicy treat on the beach after work or used as a crispy vessel for your favourite dip. You can also slice them up and add to salads or cooked up with their greens to enhance the flavour. Shake those connotations of Turnips, try Salad Turnips!

RECIPES OF THE WEEK:

 

Glazed Salad (Hakurei) Turnips

 If you are interested in cooking with Salad Turnips here is a beautifully simple recipe incorporating the whole vegetable, greens and root. 

 

INGREDIENTS:

  • 3 bunches salad turnips, trimmed, greens reserved
  • 1/4 cup (1/2 stick) unsalted butter
  • 3 tablespoons sugar
  • Kosher salt

INSTRUCTIONS:

  1. Place salad turnips in a large skillet; add water to cover turnips halfway. Add butter, sugar, and a large pinch of salt; bring to a boil. Cook, stirring occasionally, until liquid is syrupy and turnips are tender, about 15 minutes. (if turnips are tender before liquid has reduced, use a slotted spoon to transfer turnips to a plate and reduce liquid until syrupy. Return turnips to pan and stir to coat well.)
  2. Add turnip greens to skillet and cook over medium heat, stirring occasionally, until just wilted, 2-3 minutes. Season with salt.

Roasted Salad Turnip and Radish

Another great recipe using the whole Salad Turnip. What I liked about this recipe is that it also uses Radishes and their greens which are deliciously fresh from our farm right now. 

 

INGREDIENTS:

  • 1 bunch radishes
  • 1 bunch Salad (Hakurei) turnips
  • 3 tbsp olive oil
  • 1 tsp kosher salt

DIRECTIONS:

  1. Preheat oven to 425F.
  1. Slice the greens off the turnips and radishes. Scrub the turnips and radishes well, and rinse the greens repeatedly until they are grit free.
  1. Cut the turnips and radishes into wedges. Halve the small ones, and quarter or sixth the larger ones. In a large bowl, toss the vegetables with 2 tbsp of olive oil and 1/2 tsp of salt. Pour the vegetables into the roasting pan. Roast for 15 minutes, stirring and turning the vegetables at 7 minutes.
  1. Dry the washed greens to remove most of the water. Roughly chop the greens into bite-sized pieces, then toss them in the large bowl with the rest of the olive oil and the salt. Pull the roasting pan out of the oven, turn and stir the vegetables again and then make a space for the greens. Spread out the greens in the space and return the pan to the oven. Roast for 5 minutes more.
