LONG ENGLISH CUCUMBERS

 

Cucumbers have been cultivated for over 3,000 years! Among the most popular these days is the Long English Cucumber. Unique in that it doesn't require pollination to produce fruit. This results in a smooth, thin skinned and seedless treat ready for biting into!

A vegetable, I mean fruit, who doesn't get enough accreditation. With 95% of it consisting of water it's hard to believe cucumbers could have much else to offer. Not the case for these sleek fruits. Cucumbers are good for antioxidant activity, help with bone strength, and support heart health to name a few.

 

Grown in a steaming hot greenhouse its no wonder cucumbers are good at staying 'cool' in the heat. Here are some great uses for cucumbers to keep yourself cool on hot days.

  • Add to water for an electrolyte drink.
  • Eat a cucumber to cool your blood, decreasing swelling.
  • Apply freshly sliced cucumber to soothe a burn if you stayed a little too long in the hot sun.
  • Kick back at the end of a hard day in the sun with a Cucumber Cocktail!

RECIPES OF THE WEEK:

 

CHILLED CUCUMBER SOUP: 

with yogurt, cilantro and coriander

A light meal for when the days are too hot. Or, serve it as a starter dish for your next summer dinner party!

INGREDIENTS:

  • 1/3 of a jalapeno, sliced
  • 1 tablespoon shallot, plus more for garnish
  • 1 small garlic clove
  • 1 english cucumber ( 12 ounces) sliced
  • 1/2 cup cilantro
  • 1-2 tablespoons lime juice
  • 1 cup plain greek yogurt
  • 1/4 cup sour cream
  • 3/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 teaspoon coriander
  • 1 tablespoon olive oil

Optional Garnishes:

  • 1/2 cup cucumber- very finely diced
  • 2 scallions ( or chives) – thinly sliced at a diagonal
  • cilantro, finely chopped
  • Lime zest
  • micro greens or shoots

DIRECTIONS:

  1. Place first 12 ingredients in a blender and blend until smooth. Refrigerate until serving.
  2. Prep garnishes, finely dicing cucumber and shallot, slicing scallions.
  3. Mix sour cream and water in a small bowl.
  4. To serve, divide chilled soup among bowls.
  5. Spoon a large circle or half circle of thinned sour cream, then top with garnishes.
  6. Serve immediately.

CUCUMBER & LEMON POPSICLES

Here's one for the kids....or adults.

A great treat on a hot summers day!

INGREDIENTS:

  • 1 cucumber, skin on
  • Juice of ½ a lemon
  • 1 tablespoon lemon zest
  • 250ml (1 cup) coconut water
  • 1 tablespoon agave nectar, honey or equivalent favourite sweetener

DIRECTIONS:

  1. Add all ingredients to a high-speed blender and blitz until smooth. Pour into popsicle/ice lolly molds and freeze until solid.
  2. Alternatively, puree the cucumber with a hand held emersion blender until smooth. Mix with the other ingredients until well combined. Pour into popsicle/ice lolly molds and freeze until solid.
