ON THE FARM

 

 

 

The weather was on our side last week. On Tuesday we planted our onions out in the field and instead of having a big push to set up the irrigation, Wednesdays rains ensured our onions took root in their new location. Averaging at about 2/8 of an inch it's hard to believe these litte onions will grow to such great size.

 

Onions are pushed deep into the soil at roughly 4-5 inch spacing. With our beds averaging 200ft in length I'd say we planted around 15,000 onions! 

PAC CHOI

 

This vegetable creates quite the debate, is it Pac Choi or Bok Choy? The answer, it can be both since they are of the same plant.

 

Quite robust, Pac Choi is easily distinguishable by its green stalks. From above the oval leaves spread into a stunning rosette. Every bit of this plant is beautiful and delicious.

 

Pac Choi has been used in Asia for centuries and has now found it's way onto Westerner plates. It is tender, juicy and mild in flavour. Making a great nutrient rich addition to stir-frys, soups, salads or on your sandwich.

RECIPE OF THE WEEK:

 

Herb and Pac Choi Salad

(melissahemsley.com)

 

With the summer heat coming on full blast there is nothing as good as a nice fresh salad at the end of the day. Something easily digestable and fresh. Grilled beef could be added for extra protein if it's been a big day. Since our Pac Choi is quite large I recommend 1-2 heads of Pac Choi. To Shred simply cut perpendicular to the stems with a sharp knife. 

 

INGREDIENTS:

  • Leaves of 4 large heads of pac choi, shredded
  • Leaves of 1 large lettuce, shredded
  • 1 large handful of fresh cilantro, roughly chopped
  • 1 large handful of fresh mint leaves, roughly chopped
  • 1 large handful of fresh Thai basil (or cilantro), roughly chopped
  • 4 spring onions, finely sliced

DRESSING:

  • Juice and zest of 1 1⁄2 limes
  • 6 tbsp extra-virgin olive oil
  • 1 tsp raw honey or maple syrup
  • 2 tbsp tamari
  • Sea salt and black pepper

TOPPING:

  • 1 large handful of almonds, cashews or sesame seeds (or a mixture)

 

INSTRUCTIONS:

  1. To make the topping, heat up a frying pan and dry-toast the nuts or seeds and a little salt for about 1 minute over a medium heat until golden. Keep an eye on them as they’ll quickly burn, and toss halfway through cooking.
  2. Whisk the dressing ingredients together in a large serving bowl and season to taste.
  3. Place the shredded pac choi and lettuce and the chopped herbs in the bowl and mix with the sliced spring onions. Toss in the dressing and top with the toasted nuts or seeds.
