Marking the Winter Solstice - Dec 21st

 

Winter Solstice - the shortest day of the year - is a meaningful time for farmers, as our work life revolves around the seasons and the Earth's passage around the sun. It's a time for us to slow down, reflect on the past year, enjoy good food, friends and family and be thankful for many things.

We are very grateful for our many devoted customers who show their support for local, organic farming by choosing to make purchases at the market. This was an extra special year for us, as we celebrated 25 years of Wild Flight Farm. Thank you to each and every one of you for giving us a reason to keep doing what we do!

Every time I cut a red cabbage in half (well, maybe not every time, since sometimes I cut over 100 in one day) I have to marvel at the beauty contained in the folds, patterns and colours. But the cabbage is not just a work of art. Within those layers that have taken months to develop, lies a rich array of phytochemicals, antioxidants, vitamins and minerals designed to hold through the long dark winter and nourish us through the cold and flu season.

 

Some of these essential components include thiamin, riboflavin, folate, calcium, manganese, magnesium, iron, and potassium, as well as vitamin C, vitamin A, vitamin E, vitamin K, dietary fiber, and the B vitamins. In all the source I checked, red (and green) cabbage were listed as being a superiour source of vitamin C to citrus fruit. But red cabbage boasts one extra nutrient not found in green cabbage. Anthocyanins are the antioxidants that give red cabbage its purple color. These flavonoids are known for their health-boosting benefits including cancer-fighting and memory improvement. 

I like to eat red cabbage cooked or raw. I'm including a recipe for a traditional German-style cooked cabbage dish served at Christmas dinner. But my favourite way to eat it is finely sliced, raw, and added to almost any fresh salad I prepare. It adds texture, colour and a nutritional boost to any meal.

Here's a gift that could be enjoyed by almost anyone. Not only does organic food lead to a cleaner environment but it also says you care about the health of the recipient!

A traditional sweet/sour German-style dish, often served with poultry or pork.

 

Braised Red Cabbage

(adapted from Budgetbytes.com)

Braised Red Cabbage is an easy, cost efficient, and healthful side for your comforting winter meals. BudgetBytes.com

 

Ingredients:

2 Tbsp butter 
1 yellow onion 
2 lbs red cabbage (about 6-8 cups shredded) 
1 granny smith apple 
1/4 cup apple cider vinegar 
1/4 cup water (or more as needed)

1/4 cup brown sugar (optional)

1/4 teaspoon ground cloves 
1/2 tsp salt 
Freshly cracked pepper 

 

Directions:

1. Finely dice the onion and add it to a large pot along with the butter. Sauté over medium to medium-low heat for about 5 minutes, or until the onions are soft and transparent.

 

2. While the onions are sautéing, finely shred the cabbage and thinly slice the apple. Add the cabbage, apple, vinegar, water, sugar, cloves and salt to the pot. Turn the heat to medium, place a lid on the pot, and let the cabbage cook, stirring occasionally, until very tender (20-30 minutes, depending on your desired texture). If the bottom of the pot begins to dry up, add another 1/4 cup water.


3. Taste the cabbage and season with freshly cracked pepper or more salt or vinegar if desired.

A colourful, crunchy salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette.

 

Dazzling Winter Slaw

(adapted from Geniuskitchen.com)

Ingredients:

THE SLAW:

1⁄2 medium red cabbage, finely shredded and outer leaves trimmed
2 green apples, cored and thinly sliced
4 carrots, peeled and grated
1⁄2 small red onion, peeled and thinly sliced


THE DRESSING:
2 tablespoons Dijon mustard
1 garlic clove, peeled and finely minced
1 teaspoon caster sugar
3 tablespoons olive oil
2 tablespoons walnut oil
3 tablespoons white wine vinegar


TO FINISH:
1⁄2 cup finely chopped pecan nuts
parsley, for garnish


OPTIONAL EXTRAS:
1⁄2 cup semi- dried cranberries
1⁄2 cup finely chopped walnuts
1 raw beetroot, finely grated

 

Directions:

Make the dressing by mixing all the ingredients together in a jar - giving them all a good shake. 

Place all the prepared vegetables and the apple in a large mixing bowl and mix by hand.
One hour before serving add the dressing and mix well, allowing the flavours to infuse together.
