A Wild Flight on the farm!

Geese amass above us as we harvest in the field.  

ON THE FARM

We're seeing orange this Halloween! 

Our carrots are no small feat to get out of the ground. Covered in mud, we haul them out, wipe down each one, snap their greens and toss them in a bin. We stack the bins onto our tractor bucket to bring them to the packing shed.

Once they're up in the packing shed we use our large vegetable washer to get the majority of dirt off. We give them a final spray on the table as we sort between juicers and regular carrots. 

The last step is to sort our carrots between sizes, weigh them into bags and send them off to market. It's a good thing they're so darn tasty!

CARROTS, CARROTS & more CARROTS!

 

Carrots are the hot topic on the farm these days. Patiently we've waited for our rich clay soil to dry out a little to ease our carrot harvest. It's a labour of love, pulling blocks of soil out of the ground to dig through and find our carrots. Last week we finally pulled the last carrots out of the field! 

I have to say, these carrots were well worth the time, they taste absolutely amazing! Sweet, juicy and the perfect crunch.

 

At market we sell our carrots three ways: 

  • small carrots
  • large carrots 
  • jucing carrots

Our small carrot bags have the sweetest little carrots that make a perfect snacking vegetable for kids. I enjoy the small carrots as I love to roast them whole with maple syrup or a little butter and herbs.

 

Our larger carrots boast the same sweet flavour but I find them easier to use if they are cut up. Enjoy them fresh or grate and add to salads. When added to soups, chilis or stir-fries they add great texture.  

Juicer carrots are the same as our other carrots just a wee bit quirkier. Whether they broke in the bin, grew in a unique way or have a slight blemish these carrots are the same great flavour at a lower price! If you have a juicer these carrots are what you want. They also work wonderfully in soups, baking or any of the above mentioned ways. Whatever your preference be sure to grab some carrots this Halloween! 

 

 

MEET THE CREW

Emma brings optimism to our team. She has the unwavering ability to smile at everyone, offer positive words of encouragement and always sees the bright side of a situation. She is our Greenhouse fairy (Manager) achieving the endless list of tasks with grace and good nature.

 

This is Emma’s first season on the farm and she didn't miss a beat. Starting right as the greenhouses were at their busiest, she took on her role enthusiastically. She welcomed instruction and confidently delegated tasks.

 

Each week Emma runs our Wednesday Salmon Arm market. Even after the long hours she arrives every Thursday morning with a steady cheerfulness. She is a pleasure to work alongside and a highly appreciated member of our team.

 

Emma is from White Rock originally and spent time in Vancouver studying. In the early season when not on the farm she was busy completing her master’s thesis. She is our soil expert! Now you’ll find her out for a run, rock climbing, camping or spending time with family and friends.

RECIPES OF THE WEEK:

 

SPOOKY CARROT FINGERS

Carving pumpkins? Why not carve some carrots too! Have fun this Halloween with some healthy snacks.

INGREDIENTS:

  • 18 thin carrots
  • 1/2 red pepper, seeded
  • 1/2 green pepper, seeded
  • 50g soft cheese
  • hummus or dip

DIRECTIONS:

  1. Carve the carrots into finger shapes, cutting out lines for knuckles and flattening off the tips.
  2. Cut nails out of the peppers and use a little soft cheese to attach to each finger.
  3. Arrange on a platter and serve with the hummus.

CARROT CAKE PANCAKES

Carrot cake for breakfast? Yes please! Another great way to use juicer carrots.

INGREDIENTS:

  • 1 1/4 cups all-purpose flour 
  • 1/4 cup chopped walnuts, toasted
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground nutmeg
  • Dash of ground cloves
  • Dash of ground ginger
  • 1/4 cup brown sugar
  • 3/4 cup low-fat buttermilk
  • 1 tablespoon canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 large eggs, lightly beaten
  • 2 cups finely grated carrot (about 1 lb)
  • 3 tablespoons butter, softened
  • 2 tablespoons honey

DIRECTIONS:

  1. Combine flour and next 7 ingredients in a large bowl, stirring with a whisk. In a separate bowl combine 1/4 cup brown sugar and next 4 ingredients; add sugar mixture to flour mixture, stirring just until moist. Fold in 2 cups carrot.
  2. Heat a large nonstick skillet over medium heat. Coat pan with oil or butter. Spoon 4 (1/4 cup) batter mounds onto pan, spreading with a spatula. Cook for 2 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 1 minute or until bottoms are lightly browned. Repeat procedure twice with remaining batter. Combine butter and honey in a small bowl; serve with pancakes.
