ON THE FARM

The snow landed!

Last week snow covered our fields. That didn't stop the team from Kale harvesting!

Here's Claire bulk harvesting and shaking off snow from the leaves.

CLAYTONIA,

Kicking the Fall Blues

 

There may be snow outside, but inside our greenhouses are blanketed with a lush green! It's Claytonia, our final hero set to battle the blues of a rainy/snowy fall.

Claytonia is frequently referred to as Miner's Lettuce. It is native to the western U.S.  Back in the day it was discovered as an excellent source of Vitamin C.  The miners loved it!

 

Claytonia is a delicate green with edible flowers and leaves. It is a wonderful fall and early winter plant to prolong our enjoyment of fresh greens!

Its taste is mild, with a melt-in-your-mouth quality and it is best enjoyed fresh or added to cooked dishes right at the end. Use it as a substitute for lettuce, spinach or sprouts.

 

Claytonia is our hidden gem. I suspect someday soon it will be on the popularity charts like kale. But, for now it's our little secret so enjoy!

 

 

MEET THE CREW

Katie is our inquisitive one on the farm. She has a thirst for knowledge and self betterment. She is an encyclopedia of information and is on a quest to better the world. Here's to Katie!

 

Coming from 7 years of farming in Ontario Katie was looking for a change of scenery and jumped on the opportunity to become our farm manager. Katie is a compassionate leader, managing all of us characters to ensure we are all working at our optimum! She knows when to laugh and when to keep us focused. Learning the logistics of the farm, driving tractors, and juggling the office work; Katie has taken it all in stride.

 

Katie grew up in Edmonton, has lived many years in Ontario and has spent this last summer in Salmon Arm. When she's not managing us hooligans on the farm she's out exploring the area. Hiking Enderby Cliffs, lounging by the lake or watching the salmon run, Katie's taking it all in!

The Shuswap Food Action Society and The Shuswap Life are collaborating to bring you an evening of learning through film.

 

The Event is held at Salmar Classic

Thursday November 29th.

Doors open at 6:30pm and the show begins at 7pm.

 

The event is by donation.

RECIPES OF THE WEEK:

 

FRESH CLAYTONIA SALAD

Adapted from: forestandfauna.com

 

Immerse yourself in the splendour of claytonia! Substitute cuccumber for watermelon radish!

INGREDIENTS:

  • 4-6 cups of Claytonia
  • 1/2 cup green apples
  • 1/4 cup sliced red onion
  • 1/4 cup watermelon radish
  • Tablespoon optional: garnish with 1 toasted sesame seeds*

For Dressing:

  • 3 Tablespoons olive oil
  • 1 Tablespoon white wine vinegar or rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon maple syrup

DIRECTIONS:

  1. Prepare the lettuce by separating the large disks from the stems, and then I chop the stems to include in the salad too.
  1. Slice apple and radishes.
  1. Toast the sesame seeds in a dry pan for a few minutes over medium heat, keep a close eye on them, and stir frequently.
  1. Whisk dressing together in a small dish and then toss into the salad.
  1. Garnish with toasted sesame seeds and serve.

CLAYTONIA SMOOTHIE

There is still time to enjoy a fresh smoothie! Try this delicious beverage with fall pears and claytonia.

INGREDIENTS:

  • 1 cup miner’s lettuce
  • 1/2 ripe pear
  • 1/2 ripe banana
  • 1/2 cup blueberries
  • 1/2 cup plain yogurt
  • 1/4 cup milk (or milk substitutes or juice)

DIRECTIONS:

  1. Toss all the ingredients into your blender and enjoy! Yields one large smoothie.
