ON THE FARM

 

Many hands make light work.....well relatively light work for farm life.

On the farm each employee is responsible for harvesting specific vegetables. This way we become very familiar and efficient at harvesting our vegetables or herbs. Some days with bulk orders and getting ready for market there are too many vegetables for one person to process in time.

That's when you get a litte help from your friends!

Here we are on the farm packing radishes and beets working as a team, sharing the load and having some laughs along the way.

GARLIC SCAPES:

Re-scaping your plate

While out picking Garlic Scapes with Claire this morning I couldn't help but marvel at the curling scapes. They perfectly spiral their way out the top, presenting themselves as a delicate treat just waiting to be plucked. I like to think of them as a early season gift from Garlic!

 

Snacking on one this morning I was reminded of how deliciously pungent they are, if raw I'd say parallel in flavour to a garlic clove. Their texture is similar to asparagus.

Garlic Scapes are wonderfully versatile, they can be used like garlic but also used as a flavour boost for soups, stews or curries. Their bold flavour makes for a great addition if chopped finely on salads, in marinades or salad dressings.

 

Pesto is a very popular way to use Garlic Scapes. If cooking with them they are fantastic in your morning omelette, stir-frys, or sauteed vegetable dishes.

 

Garlic Scapes in a bag or container can last for a month or more in the refridgerator. I suggest stalking up on these crazy curls as they are a great item to have on hand for adding a little extra kick to any of your favorite recipes!

RECIPES OF THE WEEK:

 

GRILLED GARLIC SCAPES: 

with Sea Salt & Black Pepper

A great way to discover the texture and flavour of Garlic Scapes. Serve this as a side dish at your next BBQ.

 

 

INGREDIENTS:

 

  • 1 - 2 pounds garlic scapes
  • 2 tablespoon olive oil
  • black pepper, to taste
  • sea salt, to taste

DIRECTIONS:

  1. Heat your grill to a low-medium flame.
  2. Wash and dry the garlic scapes. Cut away the harder ends - as you would like asparagus and leave whole.
  3. Massage the scape with oil and sprinkle it with salt and pepper. Toss them onto the grill and brown both sides, remove them when they're soft on the inside and crispy green and golden brown on the outside.
  4. Serve the garlic scapes hot with more olive oil, sea salt and black pepper.

GARLIC SCAPE TABOULEH:

With Cucumber, Kale & Mint

This hearty salad is great for a hot summer day. Lettuce mix would make a great substitute for the kale. I would add it fresh to each meal.

 

 

INGREDIENTS:

  • 2 Tablespoons olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1 cup bulghur
  • 8 large branches of kale, stalks removed
  • 1/2 cup chopped parsley, stems removed
  • 3 tomatoes
  • 3 small cucumbers
  • 4 garlic scapes or green onions
  • 4-6 stalks fresh mint

DIRECTIONS:

  1. In a small jar, combine olive oil, lemon juice, balsamic and salt. Cover and shake to combine.
  2. Place bulgur in a large bowl and pour 2 cups boiling water over the top. Cover and let sit until water is absorbed and bulgur is soft. NOTE: cooking directions may vary with brands. Always prepare according to package directions.
  3. Finely chop kale and parsley. Toss with 1 tablespoon of lemon dressing and massage for a minute or so. Leave to wilt slightly while you prep the remaining vegetables.
  4. Dice tomatoes and cucumbers. Chop scapes into 1 cm rounds. Toss vegetables on top of the massaged kale.
  5. Add cooked bulgur to vegetables and combine with remaining dressing. Toss everything well.
  6. Finely chop mint and add to the salad. Taste the tabbouleh and add a pinch more salt if needed. Serve at once or refrigerate for up to 2 days.
