Is it possible to create multiple sidebar panels and use the 2nd one to display output from a plot rather than use it to input variables?

Yes, the pageWithSidebar template is a pretty simple Bootstrap layout. You could create your own version of it that takes a second sidebarPanel, and also create a version of mainPanel that is narrower than span8. Just type "pageWithSidebar", "mainPanel", etc. at the R console and you'll see the code that makes it up; see http://getbootstrap.com/2.3.2/scaffolding.html if you really want to get a better understanding for Bootstrap layouts.
