Essentially I want to build a bit of voip hardware that talks to both
sides (PXO and PXS) of a telephone system that I'm in proper control of
and isn't crap (and doesn't involve a PC with various PCI cards).
What I want:

There are loads of chips that seem hard to get hold of for small scale
stuff and its also not clear to me what the differences are between
either side, ie, how is the interface different for the house side
compared to the PSTN side.
Any help appreciated!

What is the problem exactly? Separating signals?
Have you considered using an ADSL micro filter too separate the analogue frequencies from the digital? I appreciate that adsl isn't what you're playing with...
