Jewish humor and delicatessan owners

There is an item in today's Tampa, Florida, newspaper about a local
delicatessan that started out as the "Kosher Korner" and turned into
"New York Style Deli". It seems that the owner who "keeps kosher
himself" determined that 90% of his customers were non-Jewish and
non-kosher and decided to do the profitable thing, after informing
is kosher customers, of course.

This is a generation of Jews that has completely forgotten kiddush
hashem. They worship at the temple of the god of the majority instead.
And, they certainly don't know how to think or do anything witty or
ingenious.

Has it yet occurred to any would-be kosher Jewish entrepreneurs living
on the kashrut fringe that they can offer their customers things like
"kosher ham" and "kosher ham and cheese" sandwiches just by substituting
kosher soy ham and kosher soy (dairyless) cheese products?
