Hi guys,
the newly released OpenNI Wrapper for Processing (as pointed by Raul) is so far the best wrapper I've seen: http://code.google.com/p/simple-openni/ (see screenshots)
It also wraps NITE which is built by PrimeSense (who made Kinect) to track user skeleton, hands, and gestures.

They've got sample Processing sketch that demonstrates interactions with Kinect.

After a day struggling with installations, trying all different builds, I successfully installed it. I have shared the exes in Dropbox for you to try it.
Non windows users, you need to follow instruction to install OpenNI for MacOS or Linux.

Sorry to clarify, I put installation notes for Windows users (I use Windows 7), otherwise you need to find your own installation instructions.
FYI you have to uninstall other CLNUI or OpenKinect drivers previously installed (having other existing drivers caused me a lot of troubles).
