Q: Friteeraus ohjeita

Sainpa tuossa joululahjaksi sellaisen öljykeittimen, jolla voi siis
valmistaa friteerattuja ruokia. Mutta koska mukana ei seurannut
minkäänlaisia reseptejä, niin olisi mukava saada muutama sellainen.
Pelkkien ranskalaisten kypsentäminen kyllä onnistuu ;-)
Mukava olisi saada ainakin kevätkääryleiden ohje...

Kananpaloista saa ainakin helposti hyvää (tyyliin KFC). Eli leivitä
fileenpalat ihan tavallisesti: kieritä kanamunassa, sitten jauhoissa
jonka seassa mausteet (suola+pippuri+extrat). Itse olen siirtynyt
kananmunasta suoraan korppujauhoon, vaikka tuohon väliin kai
periaatteessa kuuluisi vehnäjauhoissa pyöräytys.

Ja sitten ei muuta kuin rasvaan porisemaan muutamaksi minuutiksi ja
herkkuhetki on valmis!

Sen verran huomiota että KFC (ent. Kentucky Freud Chicken -- motherf*n good)
käyttää erikoista painekeitintä kanansa aikaansaamiseen.

KFC Original Recipe Fried Chicken

6 cups Crisco cooking oil
1 Egg -- beaten
2 cups Milk
2 cups All purpose flour
4 tablespoons Salt
2 teaspoons Black pepper
1 teaspoon Monosodium glutamate -- OR - you can use Accent flavor
- enhancer
1 Frying chickens; with skin - each cut into 6 pieces

Pour the oil into the pressure cooker and heat over medium heat to
about 400~. In a small bowl combine the egg and milk. In a separate
bowl, combine the remaining 4 dry ingredients. Dip each piece of
chicken into the milk until fully moistened. Roll the moistened
chicken in the flour mixture until completely coated. In groups of
four or five drop the covered chicken pieces into the oil and lock the
lid into place. When the steam begins shooting through the pressure
release set the timer for 10 minutes. After 10 minutes release the
pressure and remove the chicken to paper towels or a metal rack
todrain. Repeat with the remaining chicken.

Q. In the first book, Top Secret Recipes, you have a recipe to clone
KFC Original Recipe® Fried Chicken which requires a pressure cooker.
Why is it my pressure cooker warns against frying or if I try to fry
in my pressure cooker, the safety seal is blown?

A. The recipe was originally designed to require a pressure cooker
just as Colonel Harlan Sanders had originally created his recipe (In
fact, the original pressure cooker he used is on display under a glass
case in Louisville, Kentucky). The Colonel discovered that this method
of cooking would cook the chicken in half the time, and create a
product that was very moist and juicy inside. However, since my recipe
was created, most manufacturers of pressure cookers have discouraged
frying in their products, and warn that doing so could be hazardous.
For that reason you should NEVER use a pressure cooker to fry anything
unless the manufacturer has specifically designed the cooker for this
use. I understand that there are now only a few cookers available that
you can fry in, and finding one may now be difficult. The alternative
is to pan fry or deep fry the chicken, for roughly double the specified
cooking time, until the chicken is golden brown.

Arvaan, että tuo 400 on hra Fahrenheitin ei esim. Kelvinin asteikolla?

Muistaakseni tuota camempeeria ei kannattais paljoa leikellä. Paras tulos
tulee kokonaisista "c-juustoista" (pienistä). Muutkin valkohomejuustot
pitäisi käydä..
