I don't have much experience with OpenSearch, but there appear to be a number of ways you could integrate OpenSearch with sFlow-RT.
OpenSearch should be able to ingest syslog events. The following example shows how to export syslog events:

OpenSearch also appears to be able to query Prometheus data. The following article describes how to integrate sFlow-RT with Prometheus:

You should also be able to use sFlow-RT's scripting API to interact with the OpenSearch REST APIs to push data.
