Use the following tokens in your Prometheus scrape_config, https://blog.sflow.com/2019/10/flow-metrics-with-prometheus-and-grafana.html

key: ['mask:ipsource:24','mask:ipdestination:24']
label: ['src','dst']

Defining Flows describes the full set of options available to build Prometheus flow metrics.

can sflow show all vlan traffic whit cisco n9k !

The Cisco N9K should fill in the sFlow extended_switch structure, so you can add vlansource and / or vlandestination to your flow key, see Forwarding Information. If you are monitoring a trunk port then the VLAN can be decoded from the Ethernet header, see Ethernet
