Brined and Roasted Pork Belly

1 3/8 cups extra-fine granulated sugar
2 1/2 cups coarse sea salt -- more for seasoning
12 juniper berries
12 cloves
12 black peppercorns
3 bay leaves
2 1/2 pounds pork belly with bones -- skin on
2 onions -- peeled and chopped
Olive oil.
1. Combine sugar, salt and spices in a large pot. Add 4 1/4 quarts
water, and bring to a boil. Cool, then transfer to a large bowl and add
pork. Let stand, loosely covered, for 3 days in refrigerator.
2. Heat oven to 375 degrees. Place onions in a roasting pan. Rinse pork,
score skin with a sharp knife and place on onions. Rub skin with a bit
of olive oil, and season lightly with sea salt. Roast, uncovered, 1 1/2
to 2 hours; do not let burn. Skin should be crisp; if not, transfer to
hot broiler. Cut pork in thick slices, and serve with onions.

(No, I'm not kidding - I recently saw them at Ranch99 market and was
wondering if anyone had any recipes, because I haven't been able to
locate any via google.)

Why bother? They have them cooked at the "deli" section, braised in a
soy-sauce-based broth. It's not my favorite, but before I came down with
gout, I think I at least sampled all of Ranch 99's "lu wei", including
uterus and large-intestine ("bung").

I believe that pork bellies are indeed sliced into bacon.
The best BLT I've ever had came from the Continental Pastry Shop on University
Ave just south of 47th on the west side. I believe they grill their bacon over
charcoal, the same way they do their souvlaki. At any rate, back in the late
'70s, my sister Anne was cooking there so I used to go there a lot. She came out
to where I was sitting and asked me what I wanted. They were cooking bacon in
the back and the place smelled heavenly. I asked her if she could make me a BLT
(not on the menu at that time) and she said she thought she could cobble one up.
In a few minutes she brought out this killer sandwich surrounded by Greek fries.
On the way across the dining room 3 people waiting to order asked her "Where's
that on the menu? I want that too!" and to my knowledge it's been on their menu
ever since.
