Next cooking collective?

Ok, so who is in for the next cooking collective? Margaret, you sound
like you are heading in a different direction (maybe Tina, too?) and
Mickie, you didn't respond to the poll. Can we figure out who is
still interested and then pick a date?

I will bow out for this one, and see when the next one happens.  Andrew will be done with school at the end of February, so my weekend schedule may be a bit more open after that.

All right, so it's me, Mickie, Bethany and Cat this time?  Feb 16th?

I will put on the party planner hat  and get recipes and shopping lists ready + host, if everyone is ok with that.  In fact, I already have most of a shopping list, but I am looking at the vegetarian menu we picked last time, and I kind of hate it.  Can we re-think that?  I'm just not up for walnut empanadas after last summer's vegan fiasco (I still have at least half of that food in my freezer - what a waste!) How about, since we're so few, we just each pick a recipe we like (maybe one of our "greatest hits") and try to only make 4 or 5 this time? 

If that's ok, then would everyone be willing to just pick either a) a recipe we've made before and you liked or b) something we haven't made before but that you think would make ahead and freeze well, and send me either your choice or a copy of the recipe by next Tuesday? 

A couple of ideas (feel free pick something else, though):
Mickie's meatballs (actually  already on the list for this go-round if that matters)
Chicken Tikka
Kale Gratin
Margaret's Mac and Cheese
Chicken Enchilada's
Mickie's Pea Pesto
Coconut Chicken
Barbecue Beef (from OAMM, the first menu we tried)
Chicken Pot Pie
Chicken and summer squash with cream sauce and ravioli (again, from the first OAMM menu)
Kidney Bean Curry


Thanks, and hope nobody minds me dictating!  I just really miss having yummy food in my freezer :)

I don't remember any of the recipes we picked out but I like your suggestion of picking some of our favorites.  I really liked that coconut chicken and I think I still have some of the apricot preserves in my freezer.  I made a slow cooker coconut curry from the OAMM website that was delicious (and very easy) that we could add to the mix.  (I used the tofu called for in the recipe but a friend used chicken and sweet potato in her and said it was good).  All of the recipes you listed sound good, though.

I vote for chicken tikka and the summer squash with cream pasta. And meatballs, but they are much tastier with beef and pork :)

I'd be game to try:
Coconut Tofu Curry (we like tofu, but do others prefer chicken)
Meatballs (w/beef and pork, but what do others think?)
Chicken Tikka
Summer Squash Cream Pasta thing

Thoughts? Is that enough?  Cat, any suggestions? Remember that the pasta takes a lot of work (slicing, sauteeing, cooking the chicken separately) as do the meatballs.

I love Melissa’s suggested menu! I vote chicken on the curry and beef and pork meatballs. Do we want to throw in a batch of cookie dough as well? That’s a 15 minute mix and fill bags job.

I'm happy to do cookies.  Does someone have a recipe they love?  I would prefer to not do the granola ones again, since I was the only one in my house who would eat those and I don't need that kind of temptation.

For the meatballs: just beef and pork or beef, pork, and turkey?
