Hey, I looked at the shopping list and have a couple questions:

1) it looks like everything has been scaled for 16 people, which suggests four cookers with families of four.  I thought with your friend, Mickie, that we would have five cookers?
2) Why do the instructions seem to skip from step 8 to step 22?

I'm going to try to go to Costco today.  Mickie, it's definitely five cookers, right?  I've put in the number 20 myself (wow, how easy is that scaling), but just want to make sure there will indeed be five.

Looking at the list, I've realized that no one's compared it to the pantry box to determine what we've already got.  I think this is only an issue with spices, though, so I'm going to go ahead to Costco and maybe whoever has the pantry box can do a comparison before Melissa goes to Central Market?

OK, I've updated the list with my purchases.  Melissa, in cases where I did not buy the total amount, the amount still needed is in the NOTES column, highlighted in green.  If no more is needed, I put a strike through through the item.

A few thoughts on ingredients PLEASE READ, everyone:

Eggs: the list calls for 100 MEDIUM eggs.  An internet query leads me to believe this is about 88 large eggs.  HOWEVER, of the 100 eggs on the list, only 60 of them are used as ingredients; a full 40 EGGS are used to dredge chicken, or seal ravioli--ie, for purposes where exact amounts don't matter.  So, Melissa, I'd suggest getting 7 dozen (84) large eggs.  I did not get them at Costco because the cheapest ones they sell are still $1.47/dozen, and I think you can get it for less (or at least not more) at Central Mkt.

The Thai red chile pepper (dried) is for the Apricot Freezer jam, and is optional.  I'd rather we opt out, as Simon doesn't like spicy stuff.

Flour: 22.5 cups: another search on the internet leads me to think that a 5-lb bag of flour can vary between 17.5 and 22.5 cups.  I'd prefer to not get giant bags of flour which must be hauled around and stored.  So maybe a 5-lb and a 1-lb bag would be safe.

Shallots: the shopping list calls for 20 shallots, but looking at the recipes, I only see 20 TBSP of chopped shallots.  I can't see really needing 20 shallots to get 20 TBSP; maybe 10 or 12 will do.

Chives are for garnish: I say don't buy 'em as they won't freeze well.

Lemons: The chopping amounts spreadsheet indicates that we will need 80 TBSP of lemon juice, but for the life of me, I can't find it in the recipes.  Only the Apricot Jam calls for it, and it only asks for a paltry 3.33 TBSP (which itself looks extremely suspicious to me, for 40 cups of jam).  Can someone else look through the recipes and see if I'm missing something?

I think it would be helpful if someone vetted the recipes with the instructions and the chopping amounts, too.

Making the ravioli was one of my reservations to the menu in the first place.  I don't think we're too far down the shopping road to backtrack now, but we should decide today or tomorrow.

Ok, I vote we buy 5 large bags of frozen cheese ravioli. Any objections?  

A couple of thoughts:
-The recipe says shredded Boursin cheese, but it's like cream cheese, right? Just trying make sure I'm not missing something.
-I looked at the recipes and they look ok except the jam.  I found it online here: 
http://onceamonthmom.com/apricot-freezer-jam/, but it seems to make 6 cups but the chicken recipe only calls for 1/2 cup per meal.  So maybe the small quantities are correct?  Anyway, i am finding the whole thing confusing and I am wondering if we don't want to just buy some tjs jam or something.  Honestly, we have a million sauces in the fridge we could sub for it and I don't feel like I need it.  Thoughts?

Yes, the Boursin cheese is soft, so I found that puzzling as well.

I agree with buying the ravioli.

I've already bought a LOT of apricots (and lemons), but we can just divide them up for fresh fruit if we don't want to make the jam.  I'm fine either way. 

I'm really suspicious of the shopping list, now: it says 30 lbs of chicken, but I can only find 20 lbs in the recipes.  Which is OK, since when I shopped I thought it said 30 chicken breast halves, so in fact I only bought about 15 lbs of chicken.

Melissa, I don't see any cooked chicken in the recipes?

Just realizing now that one of the recipes is beef short ribs, and Tina doesn't eat beef.  How should we address it?

There is cooked chicken in the ravioli recipe.  Sorry, didn't realize I hadn't deleted my notes at the bottom!

That's actually the way the recipe calls for it.  So should I get another 15 pounds of chicken?  Atrocious we need another Costco run?  We could get the beef and pork there (don't hit me, I know we've spent countless hours deciding to get our meet at central mkt, but now that Deborah and Nina are out...)

I'm not totally clear about what you bought, Margaret.  Is it everything with a green note?  Did you buy shallots?

No, I did not buy shallots, I just made a note because I don't think we really need 20 shallots to make 20 Tbsp.

The green notes are the things I bought that still need some.  If I bought all that we need, I crossed it out.  If there are no notes or crossouts, I didn't buy any.

I think we can get another 5 lbs raw for the coconut chicken, and if the chicken for the ravioli is cooked and shredded, let's buy rotisserie chix for it.

Oh, and Melissa, on the chicken breast for the coconut chicken, I got 30 breasts, which works out to 6 for each of us.  I think instead of getting another five lbs., you should get 10 more breasts, which would give each of us a total of 8.
