Yes, you can sail with two up. I would suggest moderate winds of 8 to
16 knots would be the most fun. In really light air you will be slow
and in heavier stuff you run the risk of rigging damage or failure.
Have fun and I hope it works well for you.
The Canadian Sea Spray web site has a lot of info. The boat running
rigging can be made more user friedly with a few changes.
