So if I decide to organize a Friday night race, can I determine the
categories, type of races and length of each races or is there a
requirement to include at minimum juniors, women and D's?

Also, based on the organizors check list, it looks like an organizor
would need to gather at minimum 3-4 volunteers to run the event. Is
there a volunteer pool we could tap into?

Regarding the motorpacing/burn out, can we be provided contact
information for those with motorbikes to help out?

Yes, the race director (i.e. person putting it on) has the final say on what goes on during a Friday night.  What Eric and I did was allow sign ups for any category Ds/Women/Sprinters/Juniors/Masters and based on the numbers in each group determine the races.  Last Friday when Adams Ave put it on, there was enough for a Ds group, a sprint group (though that petered out by the end), and a couple of juniors.  Only two women showed up so we raced with the Ds.

Not really.  If you the organizer want to officiate you only need a couple volunteers.  An announcer (still optional), scorer, and lap-card person is plenty.  Oh and a motor if necessary.  Volunteer pool: contact this list :)
