I want to batch export just transcriptions into .txt files from my Omeka site. Any suggestions on how to do this?

You could write a script that extracts transcriptions using the Omeka API. [1] First make sure you've imported all documents from MediaWiki to Omeka using the "Import document" administrative feature on each transcribe page. Then, with your script, iterate over all items in your installation and when it encounters an item that has a transcription (by the existence of a Scripto:Transcription element text), save it to a newly created txt file.

Otherwise you could try MediaWiki's export feature. [2]
