Maurie already pointed you to the main readings. They surely build the foundation.
Beyond the conceptualisation there are quite some project which have taken up the concept. I am actually setting up a Zotero library on this and develop a mailing list on Consumption Corridors research. For the time being CC research on the national level e.g. exist in Iceland (search for Jukka Heinonen and his team) or CC in energy (Samuel Betts-Davies in the UK, Millward-Hopkins in Switzerland). Regarding specific consumption areas there a concepts on food (Minna Kanerva), Mobility (Henrike Rau) and housing (Marlyne Sahakian).
You may like to search for/reach out to the authors or you can come back to me directly to get further papers.
