IR thermometers

I ​wonder about those IR thermometers so prevalent 
during the past year.  Previously, I recall seeing them 
at deli salad bars, used to monitor the sour tureens.

I understand the physics, the relationship between 
spectrum and temperature. What is the accuracy,
considering the problems of focus and reflection,
and ambient noise?

What's the internal sensor?

The accuracy is not good to my impression, but it's just for quick
scanning. And they usually have no emissivity setting (I guess they are
fixed to 0.95 or so).

So much of the 'precautions' of the last year or more have been pretty
much theatre. Even if the IR gun was perfectly accurate, and
irrespective of my state of health, the temperature of my forehead when
I've just come in from outside is going to be quite different between
January and July.
