What is a "spray dried"? Can I do it at home?
The clerk in the Orange drink place said the reason for using the egg white
is to make the drink thick. Is there any substitute of egg white to make
the drink thick and safe?
They used to do just that, and had an option on their menu "with fresh
egg". However, this practice was discontinued due to too many cases of
salmonella poisoning.
Always wash your eggs ;)

I don't know. All I can do is offer my personal anecdote. In 1972, the
last time I had an Orange Julius, I became ill within hours of drinking
it. I was deathly ill for 3 days afterward and very ill for about a week
after that. I was 22 and knew nothing about food poisoning, salmonella
or anything else. For years after that I couldn't even walk past an
Orange Julius without becoming nauseous.

Carragenaan (sp?) is commonly used to make things thick. It's an extract
of seaweed. The seaweed is often sold in its natural form at places that
sell beer-making supplies. It helps put a nice head of foam on the beer.
Also used in McDonald's lean burger, and in many milkshake recipes.
And it's used extensively in commercial baby food. There's a book called
Eater's Digest that describes food additives and tells of any known negative
info about them. Carrageenan is one of the "inconclusives", if I remember
accurately.

I've also become sick after drinking an Orange Julius, but only for
a few hours. Happened both times I tried one. Too bad, because
they tasted pretty good.
