Dear School Garden Network,
Hi everyone, is anyone involved in processing and serving school-raised chickens or fish? One Middle School is really interested in using school-raised chickens and fish in class taste-tests and culinary classes.
Any resources or advise for food-safety protocols or regulations to do so would be really appreciated!

HI Andrea,
I established and oversee our Chicken in School Program here in DC. We have incredibly strict chicken laws (you basically can’t have backyard chickens) but we were able to pass legislation to allow chickens in schools! Chickens in Schools Program the guidance document includes safety protocols approved by our department of health. Of course, we can’t kills chickens in DC, so the safety protocols only pertain to the eggs. If you are able to butcher chickens on site, consider a lesson in biology while you are at it.

In Oregon this isn’t possible unless they could go through the steps of being USDA inspected. Expensive and not for the faint of heart.
For a point of reference, I included this link on my farm to school webpage for the steps involved in serving school-raised eggs in the cafeteria. the document has yet another link to specific applications and costs associated with eggs.

In addition to the great information already noted, I want to share that there are schools doing this ( using school grown fish and meat in culinary programs). I can connect you with a district in Delaware that has an extensive FFA and Culinary track in their high school with both an aquaponics and chicken operation. They do use the eggs in the cafeteria but the meat and fish are strictly for use in the culinary program which is not connected to the cafeteria.
