I do one-on-one training in the New York area.

I just received a request to teach an 8 year old. The parents are
interested in her using email and the Internet. Also, any kind of
educational software that she can work with on her own or with her
parents.
They are open to any and all topics.

What would you recommend?

See if you can find out from HER what SHE's interested in. Even the
best intentioned of parents aren't always up to speed on their kid's
current interests.
