What is the best to overload template tags in Satchmo ?

Hello, 

I would like to change the one template tag in Satchmo "category_tree " which is used in the template base.html.

I would like to avoid overloading all the methods just to change the way the categories are displayed.

Do you have any idea about the best way to do that ?
