Pruning Experience
When: Sun Feb 15, 2026 at 11:00 AM to Sun Feb 15, 2026 at 01:00 PM
Where: Folded Hills - Winery Ranch Farmstead, 2323 Old Coast Hwy, Gaviota, CA 93117, USA
Why:
Where the Vintage Begins
This is your invitation to step inside Folded Hills... beyond the tasting room and into the vineyard, the ranch, and the decisions that shape every bottle we make.
Spend the day with us pruning the estate Grenache vines that become Lilly Rosé, our flagship wine. Winter pruning happens while the vines are dormant, and every cut matters. This is the first and most consequential moment of the vintage.
You won’t be watching.
You’ll be handed gloves and shears and guided through exactly how - and why - we prune the way we do. You’ll learn how to read a vine, where to cut, and why restraint is often the most important decision a grower makes. It’s thoughtful, hands-on work that forever changes how you understand wine.
After pruning, you’ll taste a wonderful lineup including the Lilly, the rosé born from these very vines. You’ll taste terroir, intention, and the cumulative impact of countless choices. Lilly has earned top honors, including 98 points from Sunset Magazine and Best International Rosé... and this experience lets you understand why.
Then the ranch comes alive.
We’ll feed the animals, explore the working side of Folded Hills, and finish at the Farmstead, meeting the newest members of the family - yes, including baby lambs.
This experience isn’t about observation.
It’s about participation. Perspective. Connection.
You’ll leave with a deeper appreciation for how wine is made, where it comes from, and why the smallest decisions matter most, long before the bottle is ever opened.
This is Folded Hills, from the ground up.
