  • she wants me to explore the possibility of myself doing the rituals (I am a non-brahmin, I am a Samskritam literate but just). I could dive in but not sure? 
  • a female priest will do, provided she can explain in English or Hindi as the ceremony progresses. 
I am thinking the glorious magnanimity and nobility of  Sanatana Dharma should permit one of the possibilities with absolutely no sin accruing to her?

Any suggestions?

I feel this may work out please try   in Brahma samaja The Brahmo Samaj performs marriage ceremonies, known as Vivaha, which are distinct from traditional Hindu rituals. These weddings are simple, monotheistic, and focus on equality, omitting idol worship, fire rituals, and Brahmin priests, often registered under the Special Marriage Act of 1872 or 1954.

You may better approach email lists like Bharatiya Vidvat Parishad which have a broader scope.

The Vedic ceremony can be performed by anyone  whois well trained. Today knowledge is democraticized. Also the officiants are wiling to explain in English
