am i just missing something, or is there a lack of a midi panic
button (sending an "all notes off" command)?

hm... oftentimes i have found caps-lock, q, and iirc esc to kind of work in that regard... not sure, though.

'q' is indeed an 'all notes off' button. it is on the keyboard map as
"CLR" (clear), but i should have mentioned that in the manual

caps-lock is reserved for another purpose that i don't believe we have
working, which is to recenter samchillian at the center of the current
scale, resetting a few other parameters (and probably do all notes off)

(btw i assume we are talking about the new OS X version in this forum.
at the moment all development is at a halt on the PC version)
