I've only been making alcohol from rice since Covid-19 started, but I've not found a forum devoted to this topic. So, here I am starting one. I'd like to make the forum coverage fairly broad and so I'm taking the term "sake" pretty liberally. If you are using Chinese yeast balls and rice to make alcohol, this for you. And I'd like to welcome people who define sake more specifically too-- e.g., to Koji-based processes.
