My sake is tasting sour not sweet.

Hi,

I started my first try to make sake. the rice and kojii spores have been in the bin for 30 days now, the bubbling started to stop, and don´t seemed so actived anymore. But the sake taste still sour, how can i make it taste more sweet, adding more rice or sugar in it?

Help?

The sourness could be from wild yeast or bacteria in the fermentation, from production methods, or from table rice, that hasn't been milled much, containing too many proteins and lipids. You can add sweetness by adding more rice, koji, or sugar, but it won't get rid of the sourness.

So I can still save it, by putting more rice in, or should I try all over again, sour sake can not taste that good?

Putting more rice in will make it sweeter, but won't change the sourness.
