If you click on the icon (and have access to location data) the current latitude and longitude are written to the field.
If you want some other location then click on the icon (which will save your current location) and follow the option to open Google Maps. Drop a pin at your location of interest, and then click on the latitude, longitude shown in the dropped pin information. This will save the location to the clipboard. Now return to Sailforms and paste the clipboard into your location field. You can do the paste from clipboard by including in your form a Button that performs a Paste from Clipboard command.

On the same note, but somewhat different approach, is there any way to get the GPS coordinates WITHOUT launching Google Maps?

These apps to which you refer must first get the GPS location (latitude, longitude) but must then make access to some geographic database to determine the "physical address".
It's reasonable to expect Sailforms to provide (as it does) the GPS location as that is a feature of the Android OS, but to expect Sailforms to have access to a geographic database seems over-optimistic.
Do any of the apps to which you refer provide some sort of interface (e.g. via an intent) that allows them to receive a GPS location and return your"physical address"?
On your other question, I know of no way of stopping Sailforms offering to open an appropriate app after you click on the icon of a text/GPS field.
