Apologies if this is easily found in the documentation.

My understanding of the "Grade" field in a course file was that it just wrote/appended to a GRADE.txt file in the appropriate folder in the CourseName-collect folder. I expected such a file to be 'touched' on hitting the Collect... button, but I did not see it, and even after entering a grade, I don't see it. Is it written in the student's project upon hitting Return... or stored somewhere else entirely?

Yes, that's exactly what should happen. Try it and if that doesn't
happen, let me know and we'll fix it.

Yes, that's exactly what should happen.   Try it and if that doesn't

The latter is indeed what happened on a test run, but I have a reason to prefer the former (and it seems in a prior semester's collect folder I see individual GRADE.txt folders). I have a grader who must remain anonymous and thus cannot have access to the .course file directly. I therefore have a seaparate project for hte grader where I copy the collect folder, s/he grades them, and I copy it back for distribution. Would it work if I just had him/her write to a GRADE.txt file in each folder or could there be another way to "Import" (by, say, .csv) grades for each student?
