rails 3 example?

Is there any rails 3 example apps with uploading, converting,
embedding?
I am new in rails and do not understand a lot. So if anyone could give
me some piece of code with rvideo, paperclip...

Paperclip works great with Rails 3, but I'm not sure RVideo is still actively being developed.  If I were you I would steer clear and make up some custom processors within Paperclip to process the files.

The guys who started the RVideo project are now working on Zencoder (http://zencoder.com). I'd highly recommend using Zencoder or something similar to process your video uploads. As someone who has built and maintains a similar service, I can tell you it's a LOT of work. 

Just my 2 cents ;)

Because carrierwave is better design to have custom processors, in my opinion, of course! :) Maybe my own preference?
