I do not know how to interpret a gradebook search as shown in the attached file.
Also, is there a way to scroll the gradebook while holding my students names constant in the left column, such as splitting a sheet in Excel. \

To do this you should type in the assignment name exactly as it appears in the column header when you are not filtering. Otherwise it will show all the partial matches.
