There are two versions of the Ruby / Applescript talk I could do: one 15 minutes long which covers the basic ground but doesn't go into too much detail on the distinction between RubyOSA and rb-appscript, and has one, relatively trivial, demo.
There's a 30 minute version which spends more time on the distinctions between approaches, message composition, and has more demos. I'm trying to work up a third-party web service / InDesign hook up for a nice meaty useful work demo. I've also got a complex iTunes playlist building demo and the old address-book cleanup favourite
