I've been looking at USB external hard drives online, and most mention
being compatible with Windows/Macs, but also say no software required.
What are the chances I'll have trouble with one that doesn't
specifically mention being Linux compatible?

You are almost certainly going to be able to use any external USB
drive with a Linux machine. It will probably come formatted for
Windows/DOS which most modern Linux distributions can read/write or
you can reformat it to be a native Linux/Un*x volume.
