where to send mail to customer

Hi, my friend and i are making web apps for free photographer who want to sell their photos.
And we are using ror-ecommerce as starting point.
actually we are working in japan so my friend who is japanese has been doing the translating job into japanese.
Thanks to ror-ecommerce because it really helps us very much.

sorry for long intro.
my question is, in which model where we can compose email to costumer?
we've been looking for it, but still can not figure it out. we want to make some mail template also.
we found mail configuration in config/initializers/mail.rb, but it seems that it's not what we mean.
