Could STARsolo offer a purpose-built mixed-species analysis? For example, it could produce one counts matrix for human and one for mouse in a single command.

Yes, if you make a combined "genome" of two species.
The cell/gene matrix will contain the genes from both species.
Some "cells" will contain counts from both species, indicating doublets, mis-mapping, or other issues.
